Family Favorite Recipe- Rice Pudding


Hey friends!  Happy Monday!  I'm so excited it's starting to feel a little bit like Fall around here!   This is my favorite season....unfortunately, when you live in Southern Texas, it takes it awhile to get here!  I'm so excited to post one of my favorite recipes today.

Ahhhhhhh, rice pudding.  My mouth is watering just writing the word!

If there was a quality that my mom has that I wish I had inherited, it would be to be as good of a cook as she is.  (Well she has other great qualities too that I wish I had. LOL!) My mom made all of our meals from scratch and everyone loved to come over for dinner.  One of our family favorites is my moms rice pudding.  When I went to college, I would buy the rice pudding in the store because I couldn't cook.... it didn't taste quite like my moms but was still pretty good.  Now I am trying to collect some of my favorite family recipes and rice pudding was definitely on the top of my list.  Foods that bring you back to childhood memories are always the best!
I'm so excited to share the recipe with you!
Here's what you'll need:
  • 2 quarts (half a gallon) of milk
  • 1 can of evaporated milk
  • 1 cup of white rice uncooked
  • 1 cup of sugar
  • 2 tsp vanilla
  • cinnamon (optional)

Set your oven to bake at 350.  Mix all ingredients except cinnamon together in an oven safe bowl.  Bake for an hour.  Skim the top/ crust off the top and check to see if the rice is done.  



If not, bake for another 15-30 min.  Add cinnamon before serving.  Easy peasy!

My mom said that she has also added italian sweet coffee creamer to it to add a little variety.  I love that this is a dish you can either eat warm or cold.    

You can make it as thick or as runny as you like by adding more or less milk.  Play around with it.  Rice pudding never turns out the same, but is always delicious!


 
Ahhhhh this dish makes me so happy! Ok now I have to go make some more!
